Super Simple Summer Dessert
1 pint whipping cream
1 pkg. instant vanilla pudding (4 serving size)
1 lg. can fruit cocktail, drained
2 lg. snickers bars, chopped
Beat whipping cream and pudding mix with mixer until stiff. Fold in
remaining ingredients and chill.

I make this super easy pie often during the summer.
Cool Summer Pie
1-4 serving size pkg raspberry jello
1-6 oz. raspberry yogurt
1-10 oz. cool whip
graham cracker crust
graham cracker crumbs
Dissolve jello in 1 cup boiling water. Chill until half set.
With wire whisk beat in yogurt until blended. Stir in 3/4
container of cool whip and spoon into crust. Chill. When set,
top with remaining cool whip and sprinkle with graham cracker
crumbs. Experiment with different matching flavor jellos and
yogurts or chocolate crust for variety.
Enjoy!

Have you tried baking your bacon
350 degree for about 30 minutes
Line a pan with tin foil and place the bacon on it. Cool for about 30+- minutes, checking on it every 10 minutes or so. Remove it from the oven and place on a plate or other holder with paper towel. You can put back into the over to make crisper.
Once the grease is cooled, fold up the tin foil and discard, no mess no fuss. It will not pop and splatter like in a pan, does not shrink as much and if you use the maple smoked, gives off a fantastic aroma that will definately get them out of bed.
350 degree for about 30 minutes

Great tip! I have tried that method and it's actually better than in the frying pan trying to keep them flat (even with a press).
I use bacon a lot, not so much for it as a " meat" but for flavorings in things like greens, soups/chowders and salads.
My tip is to slice a package of bacon in 4 sections (crosswise), don't even bother removing the packaging, wrap each section in plastic (or just put in a sandwich bag) and keep it in the freezer. Then you can use what you need a little at a time. also, you can fry it up in olive oil (I know it seems redundant, but the olive oil is good cholesterol and cooks up the bacon nicely.

Ok I promised a few I'd post these
Fresh Baked Halibut in a Coconut and Macadamia nut crust
5 ounce halibut
1 can unsweetened coconut milk
1 cup melted butter
coconut-macadamia-nut mixture
Crust mix:
1 cup unsweetened shredded coconut
1/2 cup chopped or crushed macadamia nuts
1/2 cup panko (bread crumbs)
Preheat oven at 350 degrees. Marinate halibut in coconut milk for one hour. Drain well. Dip fillets in the melted butter.
Dip fillets into the crust mixture and then pack more crust mixture on top of fillet once placed on a baking sheet that has been sprayed with Pam or use parchment paper. Season top with salt and pepper.
Bake 10-15 minutes

Halibut Enchiladas
1/2 c. green pepper chopped
1 small onion chopped
Saute in 1 tablespoon vegetable oil briefly
1 1/2 cans chopped green chilies
1 pt. sour cream
2 c. cooked, cooked, and flaked halibut
salt and pepper to taste
1 dozen tortillas
Grated cheddar cheese
Mix all ingredients except tortillas and cheese. Set aside. Heat tortillas under the broiler of soften in the microwave (30 seconds).
Fill tortillas with halibut mixture and place in a oiled baking dish. Garnish with grated cheese and bake at 375 degrees for 15 to 20 minutes. I also like to top mine with Enchilada sauce before adding cheese to the top but that is optional.

2 cans (not marinated) artichoke bottoms chopped
2 c. mayonnaise
1 1/2 c. parmesan cheese
8 oz. pkg. cream cheese
Dill weed to taste
Melt all ingredients in a sauce pan and mix well. Transfer to casserole dish and bake at 350 for 20 minutes or until top begins to brown. Serve hot with bread or crackers.
Optional you can add 1/2 cup shredded crab meat....best with Tanner crab but imitation crab also works.

Norlands Bread (Washburn family recipe)

2 tsp salt 2 1/4 c. hot water
2 TB yeast 1 TB butter
2 c. flour 1/2 c. molasses
1 c. quick oats
Combine bowl 1 and 2 then add flour to make stiff. Let dough rise until doubled in size. Knead dough into a roll. Set in pan and let dough rise again.
Bake 350 degrees for 40 minutes.
